With over 20 years in coffee production, Edwin has spent the last decade experimenting in specialty coffee, earning international acclaim for his high-quality coffees. Beyond farming, Edwin is also a coffee consultant, Q-grader, and head judge for Colombia's Cup of Excellence. During our October 2023 visit, we explored his unique profiles, including those made with his co-fermentation technique inspired by craft beer, where hops and dehydrated fruits are added to fermentation tanks to produce remarkable flavors. This technique, involving two fermentations and a careful selection of cherries, produces exceptional distinctive profiles.
