Josue Ariel Funez Rodriguez is a second-generation coffee producer who inherited land which was originally a vegetable farm. However soon shifted to coffee, a passion he inherited from his father and what followed was a passion for producing high-quality coffee. By experimenting with different processing methods, and a desire to bring his coffee to the specialty market, he was able to reach his goal to showcase the exceptional coffee and build a sustainable future for his family’s farm.
He planted his first plant crop in the Finca La Lagunita in 2018, a farm located between 1500m and 1600m above sea level. It’s here where Josue grows the sought-after Pacamara variety and proudly our latest ‘Single Origin’ coffee. Known for its large beans and complex flavor profile, this variety is processed using an anaerobic natural method, where cherries are fermented for 72 hours and then sun-dried for 20 days. The result is a smooth, fruity coffee with a unique complex flavour profile, with exotic sweet notes reminiscent of pineapple and lychee.
As the latest addition to our Single Origin category, we begin the 2025 year excited to showcase this latest coffee that a dear friend and colleague, Giovanni from ‘Edu Cafe’ helped us discover. A young talent like Ariel and the future of specialty coffee from Honduras, we have this superb microlot - only five sacos worldwide, and we have one them - and we’re very proud to share it with you.
