THE ORIGINS OF MORNING GLORY
Ethiopia . Refisa Washing Station. Heirloom. Washed
The Refisa Washing Station is a very well known coffee station, located in the heart of the Nensebo Woreda, and belongs to SNAP, a specialty coffee exporter from Ethiopia. This station has made quite a distinct name for itself and has been active since 2019, with over 550 producers bringing their coffee cherries on donkeys and horses. The producers cultivate a range of heirloom varieties, including many of them wild from the originating neighboring forest of Bale Mountain. After the producers bring their cherries to the station, they ferment in the shade between 45 to 60 hours and eventually are washed to remove the mucilage. With a total of 200 raised drying beds, this Refisa station ensures that each batch of coffee has enough space and time to dry properly, giving it a valuable reputation as an important washing station in Ethiopia’s rich coffee industry.

Nevado del Ruiz is the name given to the majestic volcano that towers over this rich coffee region, with an altitude of 5000 meters, it is one of the world’s current active volcanoes dating back to more than 2 million years. The volcanic activity from this area regulates the climate and maintains the enrichment of the soil, providing the unique qualities necessary for the many coffee producers in this area. The area, known to indigenous peoples as ‘Comanday’, generates a mixture of Castillo and Tipica varieties that yield very sweet and citrusy notes in cups of coffee, hence why we chose it when we brought back our classic ‘EveryDay’ filter creation - Morning Glory. This region is a prize and a natural treasure for the coffee industry of Colombia and represents some of the best coffees that Colombia has to offer.

It was a challenge to try and replicate a coffee that our clients kept ordering month after month. But we saw it as a mountain to overcome; a canyon to traverse… to create another seasonal coffee, with a profile that we could replicate with different coffees.
Maintaining the combination, we stayed with a Colombian and an Ethiopian and this time we didn’t disappoint ourselves. From Nevado del Ruiz, along the foothills that are shadowed by one of the world’s active volcanoes, we selected a coffee variety that gives us those clean, crisp and bright acidic notes that we desired. This washed Castillo from the Comanday region, also has an added anaerobic fermentation for 24 hours after the washing process, giving the coffee a sweeter profile that is delicate alongside the acidic notes.
Going for glory, we went through several Ethiopias before we settled for this washed Heirloom from the Refisa Washing Station in Nenseba Woreda. Like our previous creation of this coffee, the Ethiopian compliments the Castillo with depth and character, by adding those classic fruity notes - but this time a touch of pineapple. By not overpowering the Colombian, the cup remains light and refreshing, with long lingering notes of black tea, floral qualities and a sweet acidity - a coffee that never tires.
